I kind of can’t believe it. A minute ago, we were in Minnesota in the April storm, but you guys, it’s totally here. I had it for dinner last night.
This is how it tastes:
- Juicy strawberries
- Crispy bacon
- Sweet green lettuce

- Creamy avocado cubes
- And smoked grilled chicken! I repeat: Roast!

This dream team of ingredients, better known as summer Mexican spicy Chicken Cobb Salad, comes to our hearts today from a Gabi cooking recipe.
Remember when I published the best chicken and tacos ever, told you my friend Melissa’s book was great, and then said I rarely promoted books? But when I turn around and tell you how great this is, too? Ha-ha. Fortunately, both books were published in time.
We’re not paying for any cookbook promotion – I just wanted to show you some of our favorites and give you a sneak peek at their best recipes.
This is my favorite. This is probably one of its best recipes. With the cilantro vinaigrette, I can’t use it in salads anymore. I know Gaby said champagne vinaigrette on the salad, but Gaby, come on, you can’t make fun of us like that. One more lick of cilantro sauce, and you’re done. Goodbye. This is your life now.
Okay, salad ingredients. As mentioned earlier, there are plenty of fresh summer treats here that look like this:
The more “complicated” part of this recipe (if you can call it that) is to toss the chicken in some spices and jalapeno peppers and let it marinate for a while before roasting.
It’s worth a shot, guys! So it’s worth it.
It could be more typical to take roast chicken pictures than marinated stuff, but who says normal?
Bjork and I ate this salad on the deck on a casual Tuesday night, and we both thoroughly enjoyed the juiciness of each lip lick.
It’s a little spicy, it’s crisp, and the sweetness in the middle is very beneficial.
