These carrot cakes are chewy, cinnamon-flavored, and cake-like, with just the right amount of sweetness. They are topped with coconut and oats and creamed with almond butter. The carrots are there, but they’re not particularly salty—they add some color, flavor, and texture to the almost cookie dough-like joy in the little jar in your fridge, waiting for that 3 p.m. moment to brighten your day.
Breakfast, coffee, snacks, desserts… With these little darlings, all of this is fair game.
I mean, real carrot cake is what you want; you want it to have cream cheese frosting on it—lots of cream cheese frosting. And then you finally have it, and actually, it’s very, very good. But then you suddenly break down and can’t shake the feeling that you must go to the dentist immediately. I don’t know. Maybe it’s just me.

How to make vegetarian, raw, and delicious carrot cake
You need a food processor to do this. You know I love my food processor. Please buy yourself a food processor. This is mine. (This is an affiliate link.)
First, the carrots. All you have to do is turn on the food processor. I wouldn’t say I like grated carrots, so I won’t let you do that.

Next up: clean out the carrots and pulse up your oats and coconut, so it’s kind of like a flour.
And now: everybody in.


Finally: white chocolate chips for the people who like to be extra.
If you’re vegan or want to keep it totally clean, go for some chunky nuts, cacao nibs, or vegan chips instead.

Roll, refrigerate, and done.

Instructions
- Place the carrot chunks in a food processor bowl and blend until finely chopped. (You should drink half a cup more.)
- Remove carrots and set aside. Add oats and coconut. Pulse until coarse grinding.
- Add all other ingredients, including chopped carrots, and mix until a smooth, thick “dough” forms. (You may need to push it down a few times with a spatula.)
- Add the white chocolate chips and stir until finely chopped.
- Roll into a ball. Store in refrigerator or freezer. Mwah! This week looks good.
