Conversely, this recipe leans more toward the “I have a pack of ramen noodles and some vegetables, and we can make lunch” approach. A little healthy, fast, and nostalgic (packaged ramen!) But also fresh and delicious, rich in flavor.

Classic packaged ramen, reimagined
Controversial opinion cautions, but there is a time and place to eat a large pot of hot ramen and ramen seasoning packets. For me, that would be around 2007, sitting on the floor of a small dorm with millions of Christmas lights hanging up for no reason or sitting on the couch at home, drinking salted broth, when I came home sick from work on a rainy day.
But I encourage you to use this recipe to pack ramen + levels. When can you make your own delicious broth in 20 minutes? It’s delicate, light, rich, fresher, and more vegetable, you know? The “adult me” says this is the way things are done.

Ingredients for this recipe
It’s short! With it, it’s easier to make homemade ramen.
- Ramen (Our classic Maruchan packet is just what we need; no seasoning is required!)
- Garlic and ginger
- Broth (chicken or vegetables)
- Dried shiitake mushroom
- Vegetables such as carrots or kale
- All your favorite toppings, such as pancakes, eggs, chili oil, etc.

How to make delicious homemade ramen
Although it may not follow the simple instructions on the back of the ramen package, it’s worth taking a few extra minutes to make this simple but elevated ramen.
- Stir-fried: Garlic and ginger, what a delicious pair. That’s the smell, my friends.
- Make your soup (easy!): Add chicken broth and dried shiitake mushrooms for added umami flavor.
- Add noodles: Cook your noodles in the broth with some spring Onions (please add more flavor!)
- Add vegetables: thinly sliced kale, shredded carrots, anything you like! Cook until just tender.
- Finally, You Can Add some crunchy breadcrumbs, a soft-boiled egg, chili oil, hot sauce, sesame oil, and/or soy sauce, whatever you want.
Add garlic, ginger, and dried mushrooms to the chicken broth for a quick “stock.” Cooking in the pot for a while will give you some nice flavor that will quickly be absorbed by the noodles. I said 19 minutes because the whole process takes 20 minutes. The soft egg above will get you all the likes on Instagram, while panko and extra chili oil or Sriracha will fill your mouth with joy.
A bowl of bright vegetables + delicious broth + golden breadcrumbs + soft-boiled eggs + al dente noodles won’t disappoint. ♡

How to dress ramen
The beauty of this recipe is that it’s a (very, very) blank canvas. You can add anything you want, make it your own, and make it even more vibrant!

Homemade ramen: Common problems
How do I make crunchy pancakes?
Heat a few tablespoons of oil in a large skillet over medium heat to make crisp and golden breadcrumbs. Add to the pan and stir for one minute or less or until golden. Remove and drain on paper towels. You can also sprinkle a little oil over the panko and bake them in the oven to make them golden brown and crisp.
I wouldn’t say I like mushrooms. Can I remove them?
I should think so! You can switch out any vegetables or skip them altogether. We recommend cooking with mushrooms again so the soup has a nice umami flavor and removing the mushrooms before serving.
How do I put a soft-boiled egg on top?
Good news—it’s pretty easy! In a pot, bring the water to a boil. Add the eggs from the fridge straight into the pan, cover, and cook for 6 minutes. Remove the egg and place it in the ice water. Peel off the shell, cut the egg in half, and put your beautiful egg sauce on top of the ramen.
