My favorite fried salmon sauces are basil sauce, Romesco sauce, yogurt sauce, honey mustard sauce, aji verde, avocado-based sauce like Magic Green Sauce, and gochujang sauce (listed here in the notes section). Where do you get thick, boneless, skinless salmon fillets?
I found thick, boneless, skinless fillets in the Twin Cities at Target, Trader Joe’s, Cub Foods, and Kowalski’s.

Can I use frozen salmon?
Yes, but I recommend defrosting the salmon completely for this recipe first, then cutting as directed. You’ll also need to dab it with a paper towel to ensure it’s dry enough for the spices to stick well to the surface of the salmon.

Can I use salmon with skin on?
Yes. I like to cube salmon, so I cut the skin off so it tastes more like salmon, and you can just pop it in your mouth. 🙂 If you prefer a salmon fillet with the skin on the bottom, that’s fine—you can rub the surface of the salmon fillet with the same spice and fry it skin-side down in an air fryer. I will increase the cooking time to about 9 minutes to ensure it is cooked from the center.

How long will leftover salmon stay fresh in the fridge?
Technically, cooked salmon is acceptable in the refrigerator for about 3 days. But I’ve found that this salmon, in particular, achieves its best taste within 24 hours. (For this recipe, we rarely have leftovers! Hah). If you’re eating salmon as leftovers, consider cold food. Yes, I’m serious! Reheating salmon makes it drier, and it’s always a little sad. Should I marinate the salmon?
I wouldn’t say I like marinating salmon in this dish. The longest I’ve marinated salmon with spices is 3 hours in the fridge, which doesn’t add to the overall flavor. Soaking cornstarch for too long is also not good. If you want to prepare ahead of time, slice the salmon, mix the spices, and then wait until just before whisking them together.

Do you need to fry salmon in an air fryer?
There is no need to flip. It will turn crispy and golden on its own. Just make sure the pieces are evenly distributed and not stacked on top of each other in the air fryer.
