How to Make These Meatballs (Pan FTW!)
Prepare your baking tray and food processor, and let’s get to work.
The green sauce. Put everything in a food processor and blend until finely chopped (but not mushy). This is your taste base! Transfer half the seasoning to a large meatball bowl, then use the rest for the sauce.
Meatballs. In a bowl, whisk together the eggs, paprika, salt, chili, ground beef, and reserved seasoning sauce. Roll into a ball. Place the rolled meatballs on a baking sheet, brush with olive oil, and bake!
These meatballs are then served on creamy pickles, topped with a green sauce, a pile of pickles, a simple tomato salad, and a chunk of torn rustic bread—and ouch, what a satisfying and delicious feast!

Are these juicy, tasty little meatballs sure to capture your heart? Yes. Does green sauce, in general, make the world a better place? That’s right. Let’s get started, guys.
- Preheat oven to 425 degrees.
- Make a tomato salad and enhance it with some refreshing cucumber slices for freshness! Pulse the garlic, parsley, coriander, capers, and walnuts in a food processor until finely chopped (but not creamy or mushy—you just need to finely chop!). You can also do it by hand. This is your taste base!
- Transfer half of the seasoning to a large bowl and use it for the meatballs. Add all other meatball ingredients and mix well with your hands. Form into balls and bake for 10-12 minutes.
- Add the other half of the seasoning to a small bowl. Add lemon zest, lemon juice, olive oil, salt, and pepper to taste. If you wish, add red pepper flakes to the heat. It should look like a loose pesto or spicy sauce.
- The meatballs are drizzled with pickles and served with a generous dollop of rustic bread and a scoop of tomato salad. Drizzle, dip, and then drizzle everything in a strong green sauce! It’s a big taste! That’s great!
