Chicken stew is an Italian dish suitable for sauced noodles. Right now, the best thing about it is that it is bright, acidic, and potent (mainly due to the effect of capers). Hello, yes.
But it’s also rich and delicious (thanks to the mushrooms), sweet and creamy (olive oil and butter combination), and satisfying on a mound of silky lemon-buttered capellini noodles.

How easy is this recipe?
You just put everything in an instant pot and go with the flow.

It’s a “foodie” instant pot recipe where you saut the chicken and vegetables first, and it’s delicious. But this recipe is for you if you’ve just had one of those days where you need to throw everything in and sit down for three seconds. Remove all the flour and salt, and turn on your Netflix show.
Boil some pasta and stir it all together. Look! Roast chicken is your choice.

Easy, nutritious, colorful and comforting. Is there really anything better?
Instructions
- Whisk the chicken with flour and a pinch of salt. Turn on the instant pan’s frying pan function, add the oil, and fry the chicken for a few minutes on both sides. Remove and set aside (it doesn’t matter if it’s not cooked).
- Add the onion, mushrooms and garlic. Fry until tender. Add the wine and let it sizzle.
- Put the chicken and other ingredients in an instant pot. Cook under high pressure for 15 minutes, then release the pressure.
- Shred the chicken. Stir in capers, butter, parsley, and lemon.
- Serve with angel pasta (for a little extra pizzazz, add lemon juice and butter). Top with more parsley and Parmesan cheese. You did it!
