Here’s the thing: Giardinilla is basically a mixture of pickled vegetables that can be used as an appetizer, salad, or topping, depending on what’s in it and where you’re from. As far as I know, is this an Italian/Chicago thing?
But this is a different situation: I’m not Italian, and I’m not from Chicago, but I still really, really like Giardiniera.

I love DeLallo giardiniera because I love everything about DeLallo, but, I really appreciate that DeLallo giardiniera is not packaged in oil. This way, you get a full bite without adding extra texture, and you can add texture to the beef with a bit of brine.
This is good stuff.
Once your beef is done, the rest is history.
Toast some hearty (and I mean super hearty) crunchy bread and a few slices of polovolo, add beef and cheese, and let it swim in the delicious broth.

Instructions
- Put all the ingredients in an instant pot and cook under high pressure for about 60 minutes. Decompress naturally for 10-20 minutes.
- Shred the beef (it will fall apart easily if you pull it with a fork). Store the broth/juice in an instant pot.
- Place a slice of polovolo cheese on each side of the bread and bake in the oven until melted. Top with beef and mozzarella.
- A hot sandwich is served with a small bowl of broth so you can soak your sandwich in it and experience an actual fluffy, cheesy, crusty, full-bodied Italian beef sandwich.
