Guys, check out this healthy garlic chicken salad. It’s basic, simple, and can be done in 10 minutes, but it still (obviously) has a lot of flavor. It’s also clean, real, restorative Monday dinner food. Now, she’s my favorite chicken salad—the healthiest chicken salad, my only favorite chicken salad.
This salad. She knows us. She knows what we need, what we love. She prepared succulent summer tomatoes, fresh garden basil, grilled chicken (SHH, the girl knows you can’t cook your chicken in the summer), brown rice and quinoa, and Parmesan cheese if you want to mix it up a bit in the clean eating section.
And what about the cream ingredients that hold it together? A healthy chicken salad means we don’t use mayonnaise. We’re talking about a mixture: a handful of walnuts, olive oil, lemon juice, parsley, more basil, and a dollop of garlic – all to make a clean, creamy sauce that rivals any of the best mayonnaise in a chicken salad.

You went out for a barbecue on Friday, went out for a big brunch on Saturday, and then cookie brownies showed up in your kitchen last night, and now you’re feeling great. Holy Monday, you thought it. And by you, I mean me. It’s summer, life is good, food is better. How much do you like it? I like it very much.
But I also love mastering the fantastic state of summer eating by incorporating fresh, vibrant summer flavors into something that meets clean eating requirements, especially on Monday.

Instructions
- Stir together brown rice/quinoa, chicken, and tomatoes.
- For the dressing, put everything in a food processor and blend until smooth and a little creamy. Taste and adjust as needed.
- Pour the sauce over the top of the salad toppings and let them sit together for 30 minutes so that the flavor becomes extra delicious.
