Buttered Cauliflower and Chickpeas With Mint Cilantro Sauce

Buttered cauliflower and chickpeas are weeknight staples! Roasted cauliflower, a jar of butter sauce, a jar of chickpeas, a steaming pile of rice topped with a waterfall of mint sauce.

With its unique blend of roasted flavors, this buttered cauliflower is a new weekend staple. It was five o ‘o’clock in the afternoon. Here’s what you (and I) are doing:

  • Roast some cauliflower
  • With a jar of butter sauce
  • A can of chickpeas, slightly mashed
  • Pile a steaming spoon over the rice
  • Finish with mint cilantro sauce

This is the simplest vegetable recipe that three-quarters of my family loves. (Toddlers are opponents.) It’s so easy; even a busy weeknight can accommodate it.

The cauliflower is nicely roasted and well-seasoned, and the chickpeas become a little sticky when mashed. They’re just too round sometimes, you know?

You can make the butter sauce from scratch or do what I’ve been doing, such as buy KFI brand Butter Chicken sauce from Costco, which comes in a large jar and works excellently. I also heard from your Instagram post that their Vindaloo sauce is better. If you don’t have Costco, any tikka masala or garam masala sauce you like will do (you can give it some extra cream or butter).

There’s nothing like a homemade sauce. I know, I know. But I wanted to use this recipe to change my habits so I don’t default to frozen pizza for dinner. The result is a vegetable dish that makes the whole house smell good and come together effortlessly. That’s why I’m here.

If you can, a little pickled onion on top is excellent.

1. Season and roast the cauliflower.

Coat the cauliflower with spices and avocado oil. Bake in the oven or air fryer until it’s toasty and delicious.

2. Activate your delicious butter sauce.

Homemade butter sauce, with onions, garlic, ginger, spices, tomato sauce, cream, and butter, is a delightful treat. However, if you’re looking for a convenient option, consider using store-bought sauce. Costco sells the KFI brand Butter Chicken Sauce, which I’ve always loved for its convenience and versatility, not just in butter chicken but in a range of dishes.

3. Add the chickpeas and mashed beans.

Well, you don’t have to mash them, but sometimes chickpeas are too round. You might like the mashed texture if you can understand the strange feeling.

4. Put the cauliflower in.

There she is, looking nice and hot!

5. You’ve done it! Yum!

I love it, love it, love it with cilantro sauce, and that’s why you see cascades of cilantro sauce in my bowl.

  1. Roasted cauliflower: Toss the cauliflower with avocado oil, cumin, garam masala, curry powder, smoked paprika, and salt. Bake in an air fryer for 425/20 minutes or in the oven for 425/30 minutes until golden brown.
  2. To make the mint sauce, Stir everything together. I like to blend it so it’s less chunky and more like a smooth green sauce.
  3. Butter sauce time: Add butter sauce and chickpeas to a large skillet. If you want to (and I do) lightly mash the chickpeas with a potato masher to make the texture more interesting. Add the cauliflower.
  4. Serve: Place the buttered cauliflower over rice and top with the mint sauce. Feel free to add pickled onions or any other toppings of your choice. This dish is yours to customize and enjoy!
