Hello! Let’s put celery, carrots, Onions, potatoes, chicken, spices, and pre-made cookies —yes, I said that—in an instant pot and call it dinner.

The bakeries in my hometown are famous for their chicken and dumpling soup, so I’ve eaten a lot of chicken and dumplings in my life. Growing up, it was important to know when it was chicken and dumpling day, and you needed to get there early so you didn’t miss out.

In this weeknight version ideally suited to sos, the chicken and dumplings are somewhere between a stew and a soup-it’s just a humble, comforting, creamy delicacy. It is filled with potatoes, peas, chicken, and biscuit-like dumplings, delicious and creamy without cream (though you can add some if you want). The potatoes and cookies share some of their starches, making the whole thing super cozy and rich without needing any extra dairy.

What do you need for chicken and dumplings

Here is our short list of ingredients:

  • Mirepoix(a mixture of chopped carrots, celery, and Onions that you can buy frozen or buy in the produce section to save time)
  • Chicken thigh
  • Potato
  • Pre-made cookies
  • pea
  • Chicken soup
  • Poultry seasoning

Will life feel any better when we break up the cookie dumplings, shred the chicken, add some fresh green peas, and stand by the steaming pot, basking in all the delicious goodies? (Yes).

Instant pot chicken and dumplings: Common problems

What is its consistency? Is it bisque?

It can be what you want it to be! Using 3 cups of broth will thicken your soup, like a stew, while 4 cups will thicken your soup. It’s totally your preference! Anyway, this is going to be a bowl-and-spoon recipe.

Can the leftovers be saved?

Yes, we do! Some thickening is normal (as with any soup or stew), and you may need to thin it out with more water.

I still have a little time. Can I make my cookies with this recipe?

Woah! You. That’s right. Amazing! If you want to make your cookies, these are perfect.

Can you make this recipe in a slow cooker?

The texture of the instant pot version cookies (as written) is chewy. However, we tried cooking everything in a slow cooker on high heat for 3 hours and found the cookies to be uncomfortable and mushy. Short answer: The slow cooker version is not our favorite test kitchen.

Instructions

  1. Place all ingredients in an instant pot except the peas. If you have fresh herbs, add sage, thyme, etc. If not, don’t sweat! This is shortcut cooking. Open the instant pot and cook under high pressure for 7-10 minutes.
  2. After resting for 10 minutes, use a “quick release” to release steam. Gently separate the stuck cookies with two forks.
  3. Pull out the chicken and chop or mince it. Pour it in with the peas. Taste, season, and serve!
